Longest LongganisaThe City of San Fernando is known to be producers of sumptuous processed meat products. In celebration of the feast of St. Ferdinand, one of the featured events is the showcase of our famous product, the longganiza. This year, the Pyestang Fernandino 2007 Committee, the City Government of San Fernando together with the Pampanga’s Best, Pampanga’s prime producer of meat products, will be vying for another slot in the Guinness Philippine Record with its target of 5.3 kilometer long longganiza.

This event was held at the SM City Pampanga Amphitheater, 5 in the morning of May 30, 2007. The 4.5 kilometer longganiza weighs 5, 950 kilograms. Ingredients of this record breaking longganiza are 4,000 kilograms of meat, 5,000 kilograms of garlic, 100 kilograms of soy sauce, 15 kilograms of pepper, 900 kilograms of sugar and 385 kilograms of salt and  other spices.  A total of 50 employees were tapped to make this 5.3 longganiza and this was finished within 2 days. The total worth of the longganiza is P 500, 000.00.

After the event, in coordination with the City Government, the longganisa was distributed to almost 3000 poor families from the City of San Fernando as a gesture of thanksgiving in celebration of the fiesta.

To make a Longganisa, you just have to combine all ingredients together, Mix well and let stand for an hour. Tie one end of the sausage casing and slowly fill the casing with the ground pork mixture until the end of the casing, then tie the end.   Tie the middle of the sausage casing in intervals of about 3 inches.

To cook, boil longganisa in 1/2 cup of water on a pan or wok. Water will soon evaporate then oil will ooze from the longganisa. Fry it on its own oil or add a few tablespoons of cooking oil and continue to cook for 5 to 10 minutes or until the sausage casings turn brownish

Longganisa is ideally served with steamed rice or Fried Rice.
