Bibingka

Bibingka is a favorite traditional sweetened dessert of Filipinos especially during the Christmas season.

Due to its popularity, people have tried to cook Bibingka in different and faster ways. But still, bibingka tastes best if cooked the traditional way. Glutinous rice (galapong) are soaked in water and then grinned to turn it into a batter. The batter is then placed in a specially designed clay pot over a sheet of banana leaf, where hot coals (uling) are then placed on top and bottom of the mold to cook it evenly.  Adding a few slices of white cheese (kesong puti) and salted egg (itlog na maalat), makes a richer flavor.

The bibingka is best eaten hot served with grated coconut on top, a cup of hot tea shared among family and friends.
